Since the 17th century, El Puerto has been the city where great merchants choose the world's finest wines. The culture of fino, the tuna fishing tradition and the gastronomic heritage forge here a unique sensibility for selecting products of excellence.

Inspired by this three-century-old tradition of choosing the best of each harvest, we founded La Casa Gotti with a single goal: that every oil bearing our name must meet an unmistakable standard of excellence.

How we work

Our selection process

Four meticulous steps from the Andalusian olive grove to your table.

Early harvest

October and November. We visit the Andalusian olive groves and choose the first cold-press batches, when the green olive concentrates the markers of a living oil.

Blind tasting

In our sensory lab we evaluate each batch against strict criteria of aroma, intensity and harmony. No labels, no bias.

Final selection

Only 10% of the samples pass the Gotti quality control. The rest goes back to the field or is discarded for our label.

Bottling and shipping

Bottled in dark glass to protect the polyphenols. Directly from Andalusia to your home, with traceable batch and date.

Early harvest

Why the moment of picking matters

Green October olives produce a more complex EVOO, with balanced fruity, bitter and spicy notes — the markers of a living, unoxidised oil. Early harvest sacrifices yield for quality: fewer litres per tree, but an incomparable aromatic profile and higher concentration of natural polyphenols.

Four non-negotiable principles

Quality with no shortcuts

We taste every batch before accepting it. If it doesn't convince us, it goes back. There's no second chance for an oil that isn't up to standard.

Andalusian tradition

Absolute respect for the families that grow these olive trees. We pay fairly, value their know-how and nurture long-term relationships.

Transparency

Every Gotti bottle clearly shows batch and bottling date. No anonymous blends, no confusing origins. You decide what goes into your kitchen.

Sustainability

We prioritise producers with regenerative practices: ground cover, efficient irrigation and respect for the olive-grove ecosystem.

Commitment

Real traceability, not marketing

We work with a select group of certified Andalusian mills. Every Gotti bottle includes batch and bottling date, and we know exactly which grove each oil reaching your table comes from. Transparency is not a slogan: it's our minimum standard.
